I love coconut cream powder and use it often in trail meals – it is highly shelf stable and adds fat and creaminess to may recipes. But most coconut cream powder does contain a derivative of dairy milk in the process. So if a person follows a vegan lifestyle or has to avoid dairy, most brands cannot be used.
There is organic creamed coconut by Let’s Do Organic that comes in a 7 ounce bar. It is just creamed coconut, ready to use. Cut/crush what you need and mix it 1 part coconut to 2 parts hot water. After it sits for a couple minutes you can smooth it into a liquid. Then add that to your meals. Or you can just crush some and add to the dry ingredients before rehydrating your meal.
An ounce of it contains 19 grams of fat, 4 grams of protein and has 6 grams of fiber.
The bar could become hard to use in cold weather as it will get stiffer – that can be treated by using a sharp knife to hack it off. Coconut fat melts easily once warmed up.
Find it in natural food stores and similar, near the coconut milk.
