Kirk and I shot this video in late summer up at Hurricane Ridge in Olympic National Park. If you haven’t been to Olympic National Park it is definitely a ‘life list’ park to see – you can go from the Pacific Ocean to deep rain forest to sub alpine to alpine tundra in one day and have time to hike in all of it.
That day the three of us walked among the flowers which were in full bloom (and buried under snow now).
For lunch that day I made:
One Pot Asian Inspired Chicken & Veggies
In a sandwich bag:
4 ounces small pasta shapes
1 Tbsp diced dried tomatoes
1 Tbsp diced dried carrots
1 Tbsp diced dried shallots or onions
1 Tbsp diced dried spinach
1 ½ tsp low sodium chicken bouillon
½ tsp chives
¼ tsp dried garlic
¼ tsp Thyme
¼ tsp ground pepper
1 7-ounce pouch of chicken
1 Tbsp (3 packets) shelf stable Parmesan cheese
2 packets soy sauce (2 tsp)
Bring the dry ingredients, chicken, soy sauce and 1½ cups water to a boil in your pot. Cook, covered, on low heat (gently bubbling) for 7 minutes. Turn off heat and let sit for 5 minutes covered. Add in the cheese, stirring well.
Serves 1 large appetite, 2 smaller ones.
