Beef And Veggie Couscous Soup Recipe With Video

Today’s video is for a very easy to make trail soup that will fill you up – great for winter trips! For the lower sodium beef concentrate called for I find mine at Trader Joe’s though Packit Gourmet carries a full sodium version as well.

Beef & Veggie Couscous Soup

In a snack bag:

1/2 cup whole wheat couscous

In a sandwich bag:

2 Tbsp diced dried tomato

1 Tbsp diced dried shallots

1 Tbsp diced dried spinach

1 Tbsp ‘beef’ TVP or cooked and dehydrated hamburger

1/4 tsp diced dried garlic

Pinch of Thyme

Also take:

2 packets lower sodium beef concentrate or 2 tsp low sodium beef bouillon

Parmesan cheese to taste


Cover the veggies with just enough cool water to cover. Let sit for 5 minutes.

Add 2 cups water to your pot and start heating up. Add in the veggie bag along with any remaining water. Bring to a boil, add in the couscous, stirring well. Simmer for a minute over a low flame. Turn off stove and let sit for 5 minutes.

Serve with Parmesan cheese if desired.

Serves 2 small appetites to 1 large appetite.
