Tuna Bruschetta Recipe (No Cook)

This recipe has been very popular at trail cooking presentations. It is a no cook recipe, all you need is water and time for it to rehydrate.

Tuna Bruschetta
In a sandwich bag put:
1/4 diced sun dried tomatoes
1 Tbsp diced dried bell peppers
1 Tbsp diced dried shallots or onions
1/4 tsp each:
Garlic, fresh ground black pepper, dried basil, dried oregano
Also take:
1 can olive oil packed Albacore tuna (With pop top)
Tortillas or crackers
Add 1/2 cup cool water to the bag. Let sit for at least 15 minutes. Add in tuna with oil. Seal bag tightly and gently knead till well combined.
Serve on crackers, tortillas or by itself.
Serves 1-2.
Notes: Kirk enjoys it with about 1/4 tsp Old Bay Seasoning added in for an extra kick. You can use a 3 ounce foil pouch of tuna instead, you will want to add in 1 Tablespoon of olive oil.
