Grocery Store Meals: Artichoke and Mozzarella Pasta

This recipe is another in the “Last minute trip…what do I take to eat?”. It is a hybrid style meal, using your pot to cook the pasta but a bag to mix it up for easy cleanup.

The base for the meal is the often overlooked Suddenly Salad, often found in the pasta aisle or next to the mac and cheese boxes. It comes in a number of flavors though the Classic variety works well. While the directions call for a 12 minute on average cook time you can cheat and bring the pasta to a boil with the cold water, cook for 5 to 7 minutes, then let sit for 5 minutes in the hot water to finish cooking. Everything in the recipe can be grabbed on the way out of town at your local grocery store!

Hate artichokes? Use whatever YOU want! Want meat? Pick up some shelf stable bacon or pepperoni slices. If you do leave the artichokes out be sure to add an extra Tablespoon of olive oil.
