A number of random recipes I have come across that may work well for hiking (and at home as well!). Yes, I know, I know – they are all reasonably healthy. Can’t help that…..I found these while looking for at home inspiration and healthy is the name of the game these days.

Chocolate Bark with Cherries and Pistachios

No Bake “Cookies” - yum!

Couscous Fruit Salad – this could be made at home for a dayhike lunch, first day out or even done on trail if one didn’t mind carrying the heavy fresh fruit. Bonus score if you hike a trail with free fresh berries and or fruit.

Apricot Walnut Cereal Bars

Cranberry Nut Min Loaves (bake them night before and carry one or two for the first 1 to 2 days, tightly wrapped)

Almond Honey Power Bar

Cocoa Date Oatmeal – easy to make this with plain instant oatmeal (or make your own by finely chopping up quick cooking oats!)

Spicy Honey Snack Mix
