Lazy Gingerbread Cookies

The idea for this recipe came to me recently after I had a 1 pound bag o’ organic dried eggs show up. And….a pound of eggs is quite a bit! Adding a couple other ingredients:
Pan frying till browned:
Is it a cookie? A wedge of a scone? Somewhere in the middle…..
