If you love eating meat and you love pouched chicken (I was at Target this weekend and they had the 7 ounce pouches of Valley Fresh for $2.64!!) then you might have tried out one or two of my chicken salad recipes. Making up chicken salad is easy while hiking, it is filling and high in protein. Add in that you don’t have to cook makes it even better.
Harvest Chicken Wraps – Chicken with walnuts, apples, raisins and celery – it has crunchiness that tastes great.
Curry Chicken Pitas – a warming salad.
Pecan Chicken Salad – Pecans give crunch and even more protein (plus needed fat!).
