Fast cooking pasta is a necessity if you do one pot meals and want to save fuel – but that pasta has to also taste good. Most times when I use pasta shapes in a recipe I use Barilla Piccolini – tasty pasta with great texture that cooks in 7 minutes. A good middle of the road for everything – until I noticed Barilla has a different version out, Piccolini White (The US part of the website is not up yet) that is not only high in fiber but cooks in 5 minutes – and comes in mini penne, mini shells and mini rotini (twists). The tradeoff is you get less in a box (13.25 ounces instead of 16 ounces) but taste-wise it is just as good!
I came across it at our local Safeway and it was hidden amongst the regular pasta so look carefully for it. And not only all of that but it has more calories (hello!) as an added hiker’s bonus. A 2 ounce serving (and double that for a hiker’s meal) is 210 calories, 1 gram fat, 6 grams fiber and 7 grams protein.
