I had passed over these lightly salted dry roasted edamame many times, hanging in the natural foods section at Fred Meyers (a Kroger owned PNW chain). Until recently when I had a chance to try them out in a single serving packet and wondered if I would like them – I like it both fresh and even freeze-dried (yeah, it is good – see here for trail worthy recipes!). Unlike their nasty cousins, soy nuts, the dry roasted edamame is good. Crunchy and light in texture, it is easily chewed (no fears for wrecking dental for me), with just enough salt added for a light pep. 1 ounce is 130 calories, 4 grams fat, a whopping 14 grams protein, 150 mg sodium and an even better 8 grams of fiber. If you want a trail snack that will stick with you, pick up a bag! It comes in 3 varieties as well.
