Another classic recipe from TrailCooking revisited – it is a Friday and you might have a spur of the moment trip planned. With no food ideas. All you need here is a quick stop at the grocery store for this quick-lunch or dinner.
Pecan Cranberry Ranch Chicken Salad
In a quart freezer bag:
- 1/2 cup pecans, finely diced
- 1/2 cup dried cranberries
- 7 ounce pouch chicken breast
- 2 packets or tubs shelf-stable ranch dressing
- 2 large burrito or 4 taco size flour tortillas
Add chicken to the pecan bag, stir to coat. Add in dressing to taste, stirring well.
Spread on tortillas and wrap.
For a first day out meal, bring along shredded lettuce (find in produce section in small bags) and cheese slices (deli section).
Find tubs of ranch dressing by Hidden Valley in the salad dressing section in grocery stores. For a convenient grab n’ go, pick up a bag of Fresh Gourmet nuts/raisins, found in the produce section, usually with the croutons. The bags are resealable and great to just munch on as well. Or you can buy small bags of diced pecans in the baking section. Sahale Nuts in small bags also work well, look in the produce or candy aisle.
