Food Find: Ancient Harvest Quinoa Mac & Cheese

Follow a gluten-free way of life and dream of still eating boxed mac n’ cheese? On those days when nothing but trashy food will make the world seem right?

Have you seen Ancient Harvest Quinoa Mac and Cheese yet?

Many natural food stores carry it now, or it can be ordered online. It is organic and certified gluten-free. The pasta is a blend of quinoa and corn. Simple to prepare (just like all boxed macs!), you can use a few Tablespoons of dry milk with water to make up the milk, and a packet or two of olive oil. Add in a packet of oil-packed tuna for a high protein meal. If you are like me, when you go to add the pasta to cook, add in a cup or so of freeze-dried peas. Peas are a great source of protein (and fiber!).

Either way, it is delicious and you won’t miss the gluten!

  1. Personally, I really like the nutritional benefits of Quinoa, but could never get it to cook up right while backpacking. However, I love some mac and cheese maybe the corn quinoa combination will help me get one of my favorite “grains’ out on the trail.

We'd love to hear your thoughts!
