Legumes can be overwhelming to those not used to eating them – from the texture to taste, but lentils seem to make most anyone happy. I love the earthy taste, but also how small they are. They rehydrate quickly and can go into hot or cold dishes.
You must cook the lentils in advance and dehydrate them, or dehydrate drained canned lentils (these work well). I have used these 3 types to dry them myself: Westbrae Natural Organic Lentils, Eden Organic Lentils with Onion and Bay Leaf, and Westbrae Natural Organic Black Lentils.
To dehydrate, see our Dehydrate 101 page on legumes.
For the easiest way, buy them ready-to-use from Harmony House Foods. All they need is a soaking and you can eat away! Even handy for at home……
