My mind got picked the other day by a post on the Backpacking Light forums on making quesadillas. Like I was craving them badly! So I ran to the store and picked up everything for them and whipped up a batch.

PS: Ever carried an avocado? It is actually very easy! Pick a solid one (green, not black, in color). Wrap in paper towels and carry in your mug. It’ll ripen quickly enough. Cut in half, and scoop out. Yes, the pit does weigh for carrying out…but it’s worth it.
