Meal Review: Curried Cranberry Couscous Salad

On yesterday’s hike on the PCT Catzia and I tried the Curried Cranberry Couscous Salad from Packit Gourmet for our lunch. Catzia is a vegan and after scanning the bag I had realized she could partake so I told her I would take care of lunch.

The subalpine lake we stopped at for lunch, lounging on the rocks above the water. The water was icy cold but still…nice. A light breeze and no bugs. A perfect lunch spot in my eyes.



The lunch was incredibly easy to prepare. I boiled a cup of water, added the fruit, nuts and vegetables, flavorings and the couscous. Stirred well and then let it sit for 5 or so minutes. Fluffed it up and shared with Catzia. The meal made a lot – we were both stuffed – and glad we were walking downhill after lunch.
The meal had an incredible smell and the taste was fantastic – an awesome combo of sweet and savory. Being a vegetarian/vegan choice was nice.
This is a meal I would consider buying again – it can be prepped in a pot, a bowl, large mug or a freezer bag. I felt it was well worth the cost for the quality of the food alone.
